- Maceration in stainless steel vats at a controlled temperature. Alcoholic fermentation began at this stage and continued for approximately two weeks, followed by racking and malolactic fermentation.

- After approximately 16 months of maturation in 35-50 hl oval barrels, barriques and terracotta amphorae, the individual batches were assembled and the wine was refined for a further 6 months in the bottle.
