The Pinot Noir and Chardonnay vineyards used for the production of this sparkling wine are located in the Alta Langa and at an average altitude of over 500 metres above sea level.
The soils are sedimentary of marine origin, calcareous with alternating marly and sandy layers.
After manual harvesting into crates and gentle pressing, the must undergoes temperature-controlled fermentation. The wine rests and clarifies on the lees (separately) until the following spring, when the Pinot Noir and Chardonnay are blended and the tirage is performed. After a minimum of 30 months of bottle aging at 15°C, the must is topped, then disgorged, and dosed.
After a few months of further refinement in the bottle, an elegant and harmonious Alta Langa Brut is obtained, preferably suitable as an aperitif.
